Chef Stephan Pyles’ latest culinary venture puts a bold spin on seasonal Texan fare, blending tradition with unexpected flair. The Hell’s Eggs—a quartet of deviled eggs topped with candied bacon and a surprising pop of chilé Pop Rocks—deliver a playful jolt of flavor and texture. Meanwhile, the Shiner Bock Beer Bread, baked inside an actual beer can, offers a warm, aromatic reveal that’s as theatrical as it is delicious. You cannot go wrong with any of the entrees, from large plates like the savory Texas Tempranillo Braised Boneless Short Rib, to the pastas and masas, all reflecting a respect for the Lone Star State while making each bite unique and exclusive to this part of Texas.

Blending boutique hospitality with immersive culinary experiences, The Interstate Inn and its signature restaurant, The Seeker, transform Stephenville into a must-visit destination for food lovers. From November 14–16, guests can indulge in the 7 Fishes Dinner Culinary Weekend—a seafood-forward celebration inspired by the Italian-American Feast of the Seven Fishes. Hosted by acclaimed Chef Stephan Pyles and artisanal cheesemaker Paula Lambert of Dallas’ Mozzarella Company, the weekend includes a two-night stay at the retro-chic Interstate Inn, a festive welcome reception, a multi-course dinner in The Seeker’s intimate Cork Room, and a farewell brunch. With limited availability, this exclusive getaway promises a flavorful escape worth booking now.

Entrées dive deeper into local flavor, with ingredients sourced from neighborhood gardens and the nearby Gulf. The Seared Snapper, paired with smoked tomato beurre blanc, lardon, and sautéed summer vegetables, is a standout. But when available, the Whole Roasted Gulf Catch is the true showstopper—a beautifully grilled local fish, artfully plated and perfect for sharing.

As the holiday season approaches, Hotel Lucine and The Fancy are transforming into a festive coastal retreat brimming with cheer and charm. Starting December 1, the hotel unveils “Deck the Den”—a full-property holiday makeover that wraps the space in seasonal sparkle. The celebrations continue December 5–7 with the 52nd annual Dickens on The Strand, where Galveston’s historic district is transported to Victorian London, complete with live entertainment, family-friendly activities, and street vendors offering vintage-inspired wares and holiday treats. On December 13, Aunt Lucine’s Holiday Market invites guests to shop local from 11 a.m. to 3 p.m., featuring standout artisans like Luxe & Loam (handmade and upcycled fashion), Seahag Vintage (curated vintage finds), Lisa Marie Studios (sterling silver and turquoise jewelry), Verve Jewelry (handcrafted accessories), and Beecon of Light Candles (eco-friendly beeswax creations).
