Beginning with elotes baby con salsa macha (my favorite), Chef Sanchez pays homage to his family and upbringing with a striking presentation of traditional Mexican flavors. Your palette will notice the earthy distinction of Mexico’s heirloom corn against the GMO variety we have become too familiar with. The culinary experience soon intensifies, expanding the flavor profile from a bold short rib to a rich fish atop coconut rice. Then, after a Brazilian croqueta exploding with flavor to a savory fish of the day drizzled with a white mole, a decadent picarones con helado with a sorbet paired with a light rosé is the perfect, sweet ending to this immersive Latin experience.
