The founder of Hardcore Carnivore Jess Pryles is co-hosting the season with Kelsey Pribilski. From touring cattle ranches that make Texas barbecue possible to trying beloved restaurants across the state, the pair will be exploring new flavors and meeting the people and places ‘beyond the pit.’

The two dive into pitrooms around Texas and taste how different pitmasters cook, smoke, rub and season their beef. You need to try these popular restaurants who are set on keeping Texas barbeque traditional. Some still serve the classic barbecue with grits, mac and cheese, brussel sprouts and green beans, while other restaurants in the barbecue community are exploring new innovative flavors.

The hosts visit barbecue trailblazer restaurants and try unique meals. Some pitmasters preach tradition with smoked Texas brisket, but other cooks create Asian, Mediterranean and even Caribbean fusions with their dishes.

While there is a fair share of traditional finger-licking good barbecue in Texas, there are also old classics with a twist that all Texans must try. One pitmaster combines the new with the old with his mouth watering brisket mac and cheese and his brisket grilled cheese, but it doesn’t stop there. Other restaurants serve breakfast-inspired meals with jelly on brisket or even a fusion lunch with smoked Texas prime brisket in green curry.

The co-hosts also look ‘beyond the pit’ into the  ranch-to-plate journey. Within the episodes you learn why ranches base importance on land management and cattle nutrition. Whether it’s the quality of the grass, the feed, or the way they are raised, cattle ranchers swear that these differences help ensure consistent quality in the beef they’re raising. .

You can discover how Texas has built a community that has lasted for many generations. Whether it’s a passed down cattle ranch or friends who created a restaurant together, barbecue has welcomed generations of brisket eaters who all have something in common. They love Texas barbecue.

Pryles also released four exclusive recipes that you can make at home. With the jalapeno meatballs, beef ribs, Mexican lasagna and Szechuan beef, the season will not be short of producing, making and enjoying meat.
