On the corner of Ponto Road and Carlsbad Boulevard, Cape Rey Carlsbad Beach, A Hilton Resort and Spa, embodies all the magic one should expect from this coastal California town: an anointment of uninterrupted seascape views, seagulls and albatrosses floating effortlessly overhead, cawing with melodic cries that harmoniously unite with the lapping waves and sweeping wind, and a bounty of SoCal cuisine that reflects the region’s freshness and cultural roots. With the heart of a boutique and the mind of a resort, Cape Rey is like a concierge to Carlsbad, providing all the luxuries and amenities, yet with the positive vibes and easygoing tempo that truly embrace the Carlsbad spirit.

Combining coastal palettes with natural elements like dark hardwood fixtures and roughly chiseled limestone bricks, Cape Rey’s lobby warmly welcomes guests into a calming space that encourages them to sit and casually connect.

The space transitions from a friendly welcome to a refined elegance with Chandler’s Oceanfront Dining at the corner of the lobby. Take a moment along the way to your room, or drop by for a nightcap cocktail, as the contemporary California menu features handcrafted seasonal cocktails and longstanding favorites, like the Cocoa Trace, a smoothly and subtly sweet blend of Buffalo Trace Bourbon, Crème de Cacao, orange bitters, and chocolate bitters. This is best enjoyed while staring out at the vast blue ocean, watching the twinkle of the setting sun on the sea’s surface, evoking love and gratitude.

The views continue into the rooms, where spacious accommodations and plenty of light-giving windows await. The angled shutters allow a cool, ocean-blue light to seep in, enabling a natural awakening that sparks adventure, romance, or youthful playfulness. With enchanting sights like these and luxurious comfort, it will be hard to leave the room. Let the coastal fare at Chandler’s, the resort pool, or the concierge pull you from the comfort of your room.

Chandler’s: Elevated California Cuisine

Back at Chandler’s, the elevated menu will enhance any date night, friendly gathering, or cool morning brunch. For dinner, the Hot Wild Mushroom Dip, made with mascarpone, pepper jack cheese, Parmesan, leeks, sherry vinegar, and white truffle oil, paired with furikake-sprinkled fry bread, is a cheesy, gooey, savory, and hearty start. With crowd favorites like the Furikake Crusted Bluefin Tuna or Ginger Glazed Salmon, the seafood is not to be missed.

Return for brunch as the Chef Creations are an adventurous take on regional favorites. Indulge in the Belly in a Shell, an outside-the-box reimagining of pork belly al pastor stuffed with a fried egg, Oaxaca cheese, crispy pickled onions, and pineapple habanero jam in a house-made concha roll.

The Sea Just Steps Away

No more than a few minutes from Cape Rey’s doors is the iconic South Carlsbad State Beach, where unspoiled stretches of surf, sun, and sand inspire rest, mindful reflections, or photo opportunities. Stop by Cape Rey’s valet as the staff will provide all the beach necessities, such as bikes, towels, chairs, and more.

Run the Coastline

Earn those calories, or burn them, with the six-mile course just outside Cape that leads straight into the heart of Carlsbad, skirting the picturesque Ponto Beach with its rocky crags and shimmering blue ocean, and surfers taming the waves. Follow along the pavement that leads up and down along the beloved beach, where bouquets of purple and yellow wildflowers and the herbal aromas of California Sagebrush make for a delightful run. It’s hard not to put more than your usual mileage in as the enchanting views numb all bodily sensations, leaving awe and wonder with every step. This run takes you past local volleyball weekend tournaments and across overpasses where the waves crash onto the jetties. Chase the challenge of running as far as you can before turning around, and later, recover with an Electrolyte “Superade” from Choice Super Food Bar and Juicery. The Hibiscus tea, coconut water, and pineapple medley will hydrate and quench your thirst, leaving you ready to explore the rest of Carlsbad.

Fall in Love at The Flower Fields

Stretching across 55 acres, The Flower Fields at Carlsbad Ranch are home to vibrant Giant Tecolote Ranunculus that sprout like pom-poms in yellow, white, purple, orange, and romantic red. Along these dirt roads, carefully staged antique tractors and benches create the perfect spring photo op. Don your Sunday best for holiday card-worthy snapshots that will leave certain targeted cousins and frenemies jealous as you and your better half, or you solo, create FOMO-inducing portraits with stunning florals in the backdrop.

Bons Bons of the Photo Martin Ramirez.

For lunch or an afternoon drink, local chain Bluewater Grill delivers favorites across SoCal coastal towns. The Grilled Spanish Octopus with rustic potatoes, garlic aioli, and brava sauce made with tomato, paprika, onion, and garlic is a shareable starter that packs a savory punch. Above all, consider the Ponzu Sashimi Sea Scallops, or “Sea Bonbons,” made with wasabi aioli, orange tobiko, wakame salad, and pickled ginger for a complex flavor profile that balances spice and ginger zing with fruity notes for a satisfying finish. Pair it with a Smoked Old Fashioned made with Elijah Craig Smoked Bourbon, bitters, Luxardo cherry, orange peel, simple syrup, and rosemary sprig for an herbal note, or, for something fun and bold, an Islander Oyster Shooter made with tequila, orange juice, black currant, lime, and ginger beer.

Nourish Your Appetite and Spirit

If you’re hanging around for dinner, there’s an enchanting allure that draws most people to Fresco Cocina. Whether it’s the modern, minimalist façade that transports you into a contemporary Mexican kitchen, the lively music and spiced aromas permeating the open-air dining room with an art-forward aesthetic, or the locally inspired cuisine, crafted from the highest-quality ingredients and reflecting the Latin cultural cornerstone of Carlsbad, Fresco Cocina delivers it all with genuine, loving service.

Matt, along with the rest of the staff, provides expert guidance to walk you through the local hits and their personal favorites. For starters, opt for the off-menu Diablo Salsa. This salsa kicks with heat but rolls with genuine spice onto the palate, ensuring you keep dipping for more.

Hibiscus Mezcalita. Photo Martin Ramirez.

Cocktails are among the best I’ve had, with showstoppers like the Hibiscus Mezcalita, made with mezcal, lime, lemon, agave, and hibiscus syrup, and finished with a Tajín rim for a subtle kick. It’s perfect for recovering from hot beach walks or as an evening refresher. Or consider their Oaxacan Old Fashioned, a contemporary, cultural twist on a national favorite, made with mezcal, bitters, simple syrup, and an orange peel. It’s a sophisticated libation that pairs well with those late-night hangs and the heavier dinner sure to follow.

For the Love of Tacos

While classic Mexican-inspired entrees are sure to delight, such as the succulent Carne Asada hanger steak topped with fresh chimichurri and flanked by crispy potatoes and charred carrots, the tacos are not to be missed. The Pulpo, a crispy octopus topped with sweet mango, fresh cabbage, salsa macha, and smooth chipotle crema, is a must, as is the Beer-Battered Fish, a Chilean seabass with a vibrant avocado salsa. The Crispy Pork Belly is an elevated take on humble carnitas, while the Prime Ribeye with Macha, onion, cilantro, and avocado is a reliable favorite. I must mention, too, that these are made with house-made blue tortillas.

A Walk to Remember

Carlsbad is a bounty of beauty, from the man-made to the natural. Take a stroll through Carlsbad Village and relish in the popping art scene. With murals such as the Sleeping Tiger at Witch Creek Winery, you’ll find a piece of Carlsbad culture and history along every corner of the picturesque village.

Spend a morning walking leisurely along the coast, basking in the sun beaming over the shimmering Pacific seascape. From idyllic guard shacks standing sentry beneath the crags to the psychedelic setting of dinosaurs and Bigfoot in front of The Camp Store at Carlsbad State Beach Park, a walk along the coastline blends the imaginative with the tangible, creating a space steeped in natural wonder.
